Have a party coming up for your friends? Then why not try this asparagus roast beef roll up cups to impress your guests? It’s really quick and simple to make, yet it looks very decadent and elegant.

To make the roll-ups extra elegant to impress your guests, wrap the roast beef close to the bottom of the spears, and instead of laying them on the platter, stand them up. That way they will look picture perfect.

Asparagus roast beef roll-up cups recipes

Ingredients:

12 medium asparagus spears (boiled)

1 teaspoon prepared horseradish, or more to taste

2 tablespoons cream cheese

2 tablespoons pickled pepper

Salt and pepper, to taste

12pcs sliced extra-lean deli roast beef

Mint leaves (optional)

Mix the horseradish and sour cream until well combined. Season with salt and pepper.

Lay 1 slice of the beef on a cutting board. Spread the horseradish mixture and spice pepper over the beef, leaving a small border.

Place 1 asparagus spear at one of the narrower ends of each beef slice so the tips hang over.

Add mint leaves (optional) and roll the beef around.

Cut the beef roll in half.

Repeat with the remaining roast beef to create more roll-ups. Serve immediately.

Turmeric Lassi – A Flavor from India

I met up with Meher, my uni friend the other week. Meher has spent her childhood in India before she migrate to American with her family. I had met her parents once when they were visiting her a few years back. They actually brought her lots of homemade India food that were really yummy. So when Meher was in town, we went to an India restaurant together with a couple of our friends, and the food there were really great. Makes me want to try to make India food at home straight away.

I asked Meher what India food is easy to make at home and also nutritious. She recommended this Turmeric Lassi, which was an everyday drink in India.

Lassi looks similar to the smoothies we drink. But it is actually quite different from smoothies. So what’s the difference between a lassi and a smoothie? I asked Meher. And she told me: the difference lies in the Yogurt. Fruit is the leading lady in a smoothie. But in a lassi, yogurt is the leading lady. There’s always yogurt (or kefir) in a lassi. While on the other hand, smoothies have to be fruitful but do not have to contain yogurt.

In India, lassi is often drank after a spicy meal or sometimes as a lighter dessert. Turmeric is a domestic medicine in India. It is an antioxidant, and is also a natural pain killer. It has many health advantages such as: fight cancer cell growth, anti-inflammatory, ease skin ailments. You should really keep some turmeric in your pantry. Besides, the lassi we are making today with Turmeric powder is also truly delicious. The turmeric adds a nice touch to the flavor.

Turmeric Lassi Recipe


Makes 1 glass

1 cup yogurt

1 banana
1 tsp freshly grated ginger
1 tsp honey
1/4 lemon, juice
1/2 tsp vanilla extract
2 tsp ground turmeric (buy from your nearest supermarkets or check out here for details)
3 ice cubes

Mix all ingredients in a mixer as you will do a smoothie. Add some turmeric powder and mint leaves on top and enjoy.

If you love avocados and want a simple vegan, gluten free salad, then it is super easy with this avocado chickepea salad. Buy all your ingredients from the supermarket and within 15 minutes, you are done making this salad. No cooking, no baking, a delight to make and a very tasty salad to enjoy during the summer months. Use my own homemade pesto from my kitchen window is simply a bonus, but you can buy ready made pesto from the shops for sure.

I love avocados, and I am always trying new recipes with avocados. They are like my play dough, so easy to cut up and slice and add to many, many dishes I love. Check out the avocado recipes I love right here on Cupcakepedia.

Avocado Chickpea Salad with Vegan Pesto recipe

Ingredients

  • 1 can chickpeas (rinses and drained, of course)
  • 1 avocado (cubed)
  • ½ lemon (juiced)
  • Salt and pepper (to taste)
  • 2 scallions (chopped)
  • 2 handfuls spring of arugula (sliced)
  • 4 tbsp vegan basil arugula pesto
  1. Drizzle lemon juice over avocado cubes.
  2. Combine all the ingredients in a large bowl

There, within 10-15 minutes from start to finish, no kidding. A refreshing, tasty salad is done. Even better, you can use this recipe as a sandwich filling if you mash the chickpeas beforehand. Simple Everyday Garlic Bread Recipe

50 grams of butter
2 tbsp of garlic paste
1 bread loaf
fine salt
chopped parsley
cheese

Mix the softened butter with a pinch of salt and garlic paste, add a few tablespoons of grated cheese, chopped parsley and spread the mixture on the loaf of bread split in half, then sprinkle with cheese and bake another with the grill for 15 minutes until the cheese has melted.
