Ever heard of “Refrigerator Oatmeal Cupcaketini”? Well, if you haven’t, it is time to catch up!!! I love oatmeal and eat it all year round. Now that 2013 summer is here (for some parts of Europe anyway), the refrigerator oatmeal cupcaketini is definitely something you have to try, especially when it’s warming up outside. This is a very healthy recipe for overnight, no-cook refrigerator oatmeal in glass mason jars.

How to make these? In pint-size mason jars, mix old-fashioned rolled oats (not instant, quick oats) with milk, Greek yogurt, and chia seeds. BTW, Chia seeds has great nutritional value:

  • Rich source of essential Omega-3 fatty acids, protein, antioxidants and fiber
  • Chia seeds absorb 9-12 times their weight in water
  • Versatile, use in recipes both savory and sweet
  • Include Chia seeds in yogurt and oatmeal or in smoothies
  • Add Chia seeds to sauces as a thickener and to muffins and cakes as an egg replacement

Then, add fruit or other flavorings, shake, and you’re done. The pint-size mason jars are perfect for this recipe. In fact, for many of my cupcaketinis I use pint-size mason jars. They can simply transform a dessert into delicious heaven. You can check out the details for the mason jars here.

I love everything about this recipe…Besides, it is so versatile, you can try so many things with the oatmeal, add dried fruits, chia seeds, top it up with your favourite fruit to name just a few.

If you don’t have time to make breakfast in the morning, this recipe will be a perfect summer breakfast for you. No cooking or heating up, and it is super easy to make a couple of batches on the weekend for several days’ worth of breakfast. How good is that? It’s my kind of cupcaketini for sure.

Keep overnight in the fridge, the chia seeds and oats soften and absorb the liquids. Grab one in the morning and enjoy it cold.

Refrigerator Oatmeal Cupcaketini
1/4 cup uncooked rolled oats (not quick oats)
1/3 cup milk (use organic whole milk to make it healthier)
1/4 cup greek yogurt (or other yogurt you prefer)
1 1/2 tsp chia seeds (details here)

Mix well in the mason jar. Then have some fun to add your favourite toppings. Make sure you only pick 2-3 toppings at a time. Don’t be greedy and pick too many. Or your flavour will be all mixed up and that’s not nice. You can after all create different flavours by adding different toppings in different glass jars to create all kinds of cupcaketinis you like:

Honey

Diced mango

Chocolate chips

Peaches, strawberries, diced

Cherries

Honey and cinnamon

Nuts

The list goes on and you can really add anything you like as toppings to make it a great cupcaketini. Enjoy and have fun.

I love desserts that are simple and with only a few ingredients. Simple, but classy. That’s my kind of dessert. Here we go, we need only three ingredients for this one: graham crackers, chocolate and marshmallows. All are my favourite things. Put them on a stick and let the summer begin. It’s like a s’mores lollipop, delish! I love simple dessert like this to have on a beach day.

Believe me, these are perfect treats for little kiddies or adults alike. Bring them to a barbecue on a hot summer’s day and they will be gone before the meat is off the grill. So much for dessert, I am drooling already.

Awesome Smores on a Stick Recipe

10 graham crackers (finely crushed)
10 lollipop sticks
10 large marshmallows
1 package semi-sweet chocolate (melted)

Stick the marshmallows onto the lollipop sticks.

Dip a marshmallow in the chocolate mixture to cover them half way. (You can also dip them all in the chocolate if that’s what you like. But I like the half way look, with the white marshmallows exposed)

Roll the sides and top of the marshmallow in the graham cracker crumbs.

Place on a plate to let dry.

There you go, enjoy this great Smores on a Stick and have a great beach day. Summer 2013 is set to be a fun time if we have more desserts like this.

Since we are talking about summer and diving, today’s recipe will be ocean related. Summer means lots of Prawns, and seafood. So here is another great salmon recipe. Hope you like it.

Slow cooking salmon with cherry tomatoes recipe

Ingredients:

  • 6 tbsps olive oil
  • 1/2 bunch dill (finely chopped)
  • 1/2 bunch thyme (finely chopped)
  • 1 salmon fillet (about 2.5 pound)
  • Kosher salt (check here for details)
  • 1 pack cherry tomatoes on the vine (optional)

Instructions:

  • Preheat oven 325°F.
  • Mix herb with 4 Tbsp. oil and pour into a roasting pan.
  • Lay salmon on the herb, skin side down.
  • Drizzle salmon with remaining 2 Tbsp. oil on top and season with salt.
  • Top with cherry tomatoes.

Bake for 20-25 minutes until salmon is just cooked through in the center.

What wine do you want to pair up with this dish? I am thinking of a Grgich Hills Chardonnay. A sparkling white is always the way to go with salmon for me. Check out the wine chart here to see what wine you like.

Stars and Stripes Cheesecake Shots Cupcaketini Recipe

Servings: 8 mini cupcaketinis

Ingredients:
– 2 pkg. (8 oz. each) cream cheese (softened)
– 1/6 cup sugar
– 1/4 tsp. vanilla
– 4 oz. Cool Whip (melted)
– 5 graham crackers (finely crushed)
– Berries

— Star pastry (for decoration, optional)

Instructions:
Mix cream cheese, sugar and vanilla until smooth. Stir in cool whip gradually.

Fill glasses half way with cream cheese mixture.

Top with 1 tsp graham cracker crumbs.

Level crumbs by shaking the glass gently.

Add more cream cheese mixture to fill up the glass.

Decorate with additional graham cracker crumbs and berries and a star pastry for good measure.

Refrigerate 4 hours or until firm.  Serve chilled.

With a dollop of cream cheese frosting on top, these natural red velvet cupcakes made with beets are dee-lish! And best of all, these are mini cupcakes, meaning that you can have more than one! Watch them disappear as soon as you place them on your table!

Natural Red Velvet Cupcakes Made With Beets Recipe

Red Velvet Cupcake Ingredients:

– 3/4 cup beets (boiled until tender, then puréed)
– 1/3 cup oil
– 1 1/2 cup sugar
– 1 tsp vanilla extract
– 1 1/3 cup flour
– A pinch of salt (to taste)
– 1 1/2 tbsp natural cocoa powder
– 1 1/2 tsp baking powder
– 1 cup milk
CREAM CHEESE ICING Ingredients :
– 1/4 cup Earth Balance
– 250g cream cheese

-1 1/2 cups icing sugar
– 1 tspn vanilla extract

Instructions:

Mix the beet purée and oil.
Add sugar, vanilla extract.
Sift flour, cocoa powder, salt, and baking powder.
Gradually add the flour mixture and milk until smooth.
Fill cupcake liners till 3/4 full.

Bake for 15-20 minutes.

Cream cheese icing:

Whip together all ingredients and pipe onto cupcakes as desired.
Keep the cupcakes in the fridge and get them out at least 30 minutes before serving.

This is one of my favourite raw vegetable salad recipes. No cooking, no frying, no baking. Totally natural. Want a healthy, easy and yummy salad for the summer 2013? Why not give this all raw veggie salad a go. Don’t you love to know that everything you put into your body is natural? Well, I do. I love this salad because all the ingredients are raw and thus the nutrients in the food are maintained at optimal level.

The recipe is very simple and will make your hot summer day of 2013 just that much easier and cooler. Make sure you get the freshest ingredient so that the salad tastes the best. This is a great salad for the summer days. Check out the recipes and instructions below:

Raw zucchini cherry tomatoe salad recipe

Equipment:

Glass salad bowl (I love glass salad bowls, check out here some of my favorite ones)

Ingredients:

  • 1 pack cherry tomatoes
  • 1 clove garlic, (minced, check out my garlic paste recipe here)
  • 1/4 cup walnuts
  • 1 tbsp lemon juice
  • 2 tbsp fresh basil (chopped), plus leaves for garnish
  • 2 tbsp olive oil
  • 1 zucchini (sliced to 1/4 inch long strips)

Toss all ingredients together.

Drop the lemon juice in the salad. Mix well.

Add salt and pepper to taste.

Let stand for 20 minutes before serving.

Garnish with basil leaves and enjoy.

Avocado bacon and tomato on wheat toast

Want a healthy, kick start in the morning? Then do not use white bread, use wheat toast is a great choice. It gives more texture and taste.

The creamy avocado interjects a buttery richness flavour to the toast. I sometimes slice my avocados and add them on top of the toast. Other times, I would mesh the avocados to have a spread and use it as a base for the tomatoes and bacon. Simply use a hardy multi-grain bread to get the perfect results. The sweet and smoky bacon will add all the flavours to this already great recipe. If you are a vegan, then do not add the bacon and you can turn this into a great vegetarian recipe.

Avocado bacon and tomato on wheat toast recipe

  • 4 pieces whole wheat toast
  • 1 avocado (sliced or smashed)
  • 1/2 lemon
  • 4 slices of tomatoes
  • 8 slices smoked bacon (cut in half)
  • 2 teaspoon Brown sugar
  • Salt and pepper to taste
  1. Toast the wheat toast to you like.
  2. Sprinkle brown sugar on the smoked bacon and pan fry for 1-2 minutes. Sprinkle with black pepper if you like it a bit spicy.
  3. Layer the avocado slices, one slice of tomato, 2 pieces of bacon on top of each toast.
  4. Sprinkle with a squeeze of the fresh lemon juice. Season with salt and pepper to taste.

There you go, a great energy boosting breakfast in less than 15 minutes. Enjoy and have a nice day.
