We always have hearty soups in autumn when pumpkins are abandonment. So the other day when I saw some fresh pumpkins at the fresh fruit market, I had to buy some. Pumpkin season or not, pumpkin soup is always my favorite soup. I love its golden colours and yummy taste. So satisfying. Even my hubby and little one ask for seconds. Our family can easily feed ourselves with pumpkin soup and breadsticks that I love to make.
On second thoughts, the pumpkin soup is really a great food for babies or toddlers. When my little angel was a baby, I actually made her cooked pumpkin cubes, or carrots, and she loved it. All natural baby food, now that is a great idea.
And the aroma in the kitchen? Oh, I love it so much. Have to make this soup more often, no doubt about that. If you have hungry teens to feed, pumpkin soup might be a great choice, they are packed with nutrition and is so yummy that everyone in the family loves it. Sometimes, I will sprinkle some ham or seeds on top of the soup to make it even more nutritious. Of course, you can make this soup vegan by not using the ham and butter. Use olive oil instead and it tastes just as delicious.

Scrumptious pumpkin soup
Ingredients (for 6 persons):
– 1 kg pumpkin
– 300 g carrots
– 200 g of onions
– 200 g leeks
– butter
– 3 cloves of garlic
– parsley or shallot (optional, for garnish)
– 40 ml cream
– salt and pepper (to taste)
Cut all the vegetables into large chunks.
Heat frying pan, add butter and crushed garlic until aromatic.
Add the vegetables, saute them in butter until soft.
Pour 1.5 liters of water in a large cooking pot.
Add sauteed vegetables and cook for 25 minutes or until the vegetables are soft.
Pour into a blender and mix till smooth.
Add the cream, salt and pepper and serve hot. Garnish with parsley or shallot if desired.
